Grilled Cheese Truk

Let me just start by saying this menu is A-MA-ZING (it took me a good 15 minutes just to decide)!  Sunday was a cold and cloudy day in LA, so it seemed perfect for the comfort of a grilled cheese.  The truck was parked near my apartment (click here to see when The Grilled Cheese Truk will be in your area), so it was a nice little walk as well.   

The cheesy mac & rib melt was the best of our 3 choices.  Adding pickles to this sandwich added a perfect level of flavor.  The rib meat was tender and seasoned well and it didn't even seem like I was eating mac & cheese.

The goat cheese, spinach, mushroom and tomato melt is originally served on olive bread but since I don't like olives and love me a sweet/savory combination, I asked to switch out the olive bread for the cranberry walnut.  Although not as good as the mac & cheese rib melt, this sandwich was still very tasty.  The cranberry's in the bread were a perfect amount of sweetness. 

For dessert it was the apple pie melt.  It tasted just like an apple pie (plus cheese).  The apples and candied walnuts provided a perfect crunch to the melty and gooey sharp cheddar. 

And what's grilled cheese without tomato soup, right?  Well one of the fabulous things this truck does, is serves shots of tomato soup for 50 cents.  This was perfect b/c I just wanted to sample it.  Overall the soup was yummy, but could have used a little more salt. 

I always joke that I L-O-V-E carbs (ok so maybe I am not actually joking)!  But needless to say, I find nothing wrong with a little carbs on carbs action occasionally.  If I am going to be completely honest, I am the girl who scoops up gravy and mashed potatoes with my dinner roll at Thanksgiving dinner.  MMMM carbs on carbs!  Anyway, when I saw this as an option on the menu, I knew that I had to try it out on my next trip to the grilled cheese truck. 'Til next time Grilled Cheese Truk, I will FOR SURE be coming back.
